Our Kitchen
The plates we have chosen to serve all belong to the Florentine and Tuscan tradition. Our recipe for meat sauce comes from Nonna Giulia who lived on Via Ghibellina and every Sunday would cook her delicious ravioli served with the meat sauce her family had made for generations. Another very traditional dish is the famous Florentine bread soup, Ribollita, still prepared as it was when the farmers in the surrounding countryside made it. Our pasta comes from specialty workshops or from the best Italian pasta brands.
I Ghibellini is also famous for the quality of its meat and for its Florentine beef-steak, infact the Bianchi-Ballerini family, who has owned the restaurant since 1985, started out in the 1800s as butchers. Our Florentine tripe is delicious, cooked in the best Tuscan tradition and a specialty of this particular area of the city which was famous for its trippai, street vendors who sold tripe. Our home-made desserts include Tiramisù and Zuppa Inglese, a Florentine version of English Trifle brought to the city by the English who came here in the 1800s. But if you prefer something really traditional why not try Biscotti di Prato and Vin Santo, small cookies with almonds accompanied by a special sweet Tuscan wine.

Our pizzas are created with lots of care and a touch of imagination to satisfy even the most curious, but they never stray from our Italian and Tuscan tastes. We have numerous pizzas and we are always updating them, but our real success is due to the high quality of all our ingredients.

Our Wine Cellar
Tuscany is famous for its wines which win prizes are over the world. The Ghibellini’s wine cellar is known for its large selection and for the quality of the products chosen, which we also serve by the glass. Chianti Classico and Chianti Classico Reserve, Morellino di Scansano, Brunello and Rosso di Montalcino, Nobile and Rosso di Montepulciano, the prestigious Super Tuscans, Rossi di Bolgheri, Tuscan white wines such as Vermentino and Vernaccia di San Gimignano are just a few of the wines you can choose from. We also have white wines from other Italian regions.
